INGREDIENTS
2 eggs
1 tsp. (5ml) olive oil
1 tsp. curry powder
5g dried coriander
pinch Himalayan salt
30g brown rice cakes
5 Gram hemp hearts/seeds
METHOD
Boil water in a saucepan over medium temperature and cook the eggs for 7 minutes. Once cooked drain the water and rinse the eggs under cold water
Tap the eggshells using the back of a spoon and peel the shell off. Transfer to a bowl and add in olive oil. Mash with a fork.
Add in curry powder and coriander and stir through. Season with Himalayan salt and pepper.
Spread over brown rice cakes. Sprinkle with hemp seeds.
