INGREDIENTS
2 free range eggs
35g avocado, chopped
20g red onion, diced
8 cherry tomatoes, chopped in half
40g fresh basil, chopped
10ml (2 tsp.) extra virgin olive oil
1 tsp. dried thyme
1 tsp. dried parsley
1 tsp. turmeric
METHOD
Crack the eggs into a bowl, and whisk vigorously. Stir in the thyme, parsley, and turmeric
Heat a non-stick fry pan at medium temperature and pour the egg mixture into the pan and cook for 3 minutes or until it begins to set underneath
Fold the omelette in half and remove from the heat. Transfer to a serving plate
Combine the avocado, onion, tomato, and basil in a bowl. Drizzle the olive oil over the top
Pour the avocado bruschetta over the omelette
