INGREDIENTS:

  • 1.5 tablespoon goats cheese

  • 1/2 avocado

  • 1/4 cup peas frozen and defrosted

  • 1.5 tablespoon mint finely chopped

  • 2 slices sourdough

  • 1/4 lemon juiced

  • salt and pepper to taste

INSTRUCTIONS:

  1. Roughly mash goat's cheese, avocado, peas and mint together

  2. Toast the bread

  3. Top the toast with the mash

  4. Squeeze over the lemon and season with salt and pepper to serve
