SESAME SALMON WITH CHEESY BROCOLLI

INGREDIENTS

  • 550g salmon fillet

  • 6 cups broccoli, chopped

  • 1 tbsp. sesame seeds

  • 2 tbsp. soy sauce

  • 1 tsp. ginger

  • 1/2 cup cheddar cheese, grated

METHOD

  1. Preheat oven to 180 degrees and line a baking tray with baking paper

  2. Marinate the salmon with sesame seeds, soy sauce and ginger. Wrap the salmon in foil

  3. Place broccoli on the tray and sprinkle the grated cheese over the top. Add the salmon to the tray and bake the broccoli and salmon in the oven for 15 minutes or until cooked.

  4. Remove the foil from the salmon

  5. Divide the broccoli and salmon into three meals

  6. Dish one serving and refrigerate the leftover meals for the next couple of days
