INGREDIENTS

  • 200g canned tuna, in Springwater

  • 3 cups cauliflower, grated

  • 1 tomato, diced

  • 4 shallots, chopped

  • 2 cups parsley, chopped

  • 1/2 lemon squeezed

  • 1 tbsp. olive oil

  • 1 garlic clove, crushed

METHOD

  1. Drain the water from the tuna and transfer into a bowl

  2. Mix through the cauliflower, tomato, shallots, and parsley in the bowl

  3. Separately combine the olive oil, garlic, and lemon juice

  4. Pour the dressing over the top. Divide the tuna cauliflower tabouleh into 2 meals

  5. Dish one serving in a bowl and refrigerate the second meal for tomorrow's leftover
