INGREDIENTS
30 Gram almond butter
50 Gram desiccated coconut
1 x 50g egg (medium)
30 Gram almond flour
20 Gram macadamias (crushed)
30 ml liquid egg white
1 Teaspoon maple syrup
1 Teaspoon baking powder
1 Teaspoon vanilla bean extract
1 Teaspoon cinnamon
METHOD
Pre-heat oven to 180 degrees and line a baking tray with baking paper
Crack the egg in a jug and add the liquid egg white. Whisk well
Combine the coconut, almond flour, macadamias, baking powder, vanilla extract, cinnamon, and maple syrup
Mix in the egg and almond butter
Divide the mixture into 5 piles. Roll the mixture into the palm of your hands and press down lightly to form a cookie shape. Place on the tray
Repeat this process until 5 cookies are made. Bake the cookies in the oven for 10-15 minutes or until golden brown
Serve 1 cookie as a snack and store the remaining cookies in a cool dry place to consume as a snack over the week
