INGREDIENTS
100g raw chicken breast, diced
1 tsp. (5ml) olive oil
1 tsp. paprika
1 tsp. dried thyme
1 tsp. cumin
1 garlic clove, minced
1/2 medium lime, juiced
pinch Himalayan salt
40g avocado, sliced
pinch pepper
METHOD
Combine chicken in a bowl with the olive oil, paprika, thyme, cumin and garlic.
Heat a non-stick fry pan over a medium heat. Add in chicken and cook for 8-10 minutes, stirring often, or until chicken is cooked through. In the last minute, squeeze in the lime juice and season with salt and pepper.
Divide the chicken into two portions and top with the avocado. Dish one serving in a bowl and refrigerate the second snack for tomorrow's leftover.
