INGREDIENTS
15 ml coconut oil (melted)
5 ml vanilla extract
80 Gram banana (mashed)
60 Gram rolled oats
15 Gram almond meal
20 Gram chia seeds
15 Gram Vanilla Protein Powder or Vegan alternative
2 Teaspoon cinnamon
0.5 Teaspoon baking powder
15 ml water
50 Gram frozen blueberries
METHOD
Preheat oven to 180°c and line a small baking dish or loaf tin with baking paper.
Add coconut oil, vanilla extract, and banana to a bowl and mix until well combined.
Add in oats, almond meal, chia seeds, protein powder, cinnamon, and baking powder. Mix until well combined. And in water and stir through. Allow batter to sit for 10 minutes so that chia seeds have time to expand. Gently stir through blueberries.
Add batter to the lined baking dish and spread into an even layer. Place in the oven and cook for 35-40 minutes, or until cooked through.
Cut into 4 squares and allow to cool.
Serve 2 squares for breakfast and refrigerate the remaining squares for tomorrow's leftovers
