INGREDIENTS
300 Gram lean beef mince (uncooked)
10 ml olive oil
2 garlic clove (crushed)
2 Teaspoon coriander (ground)
2 Teaspoon cumin
10 Gram red chilli (finely chopped)
200 Gram canned black beans (drained and rinsed)
100 Gram canned corn kernels (drained and rinsed)
120 Gram cos lettuce (shredded)
80 Gram cheddar cheese (grated)
150 Gram cherry tomatoes (chopped)
0.5 lime (2 wedges)
Pinch himalayan salt & pepper
160 Gram avocado (mashed)
METHOD
Heat olive oil in a non-stick fry pan over medium heat and cook the beef mince with garlic, red chili, coriander and cumin for 5-8 minutes or until cooked, stirring occasionally. Season with a pinch of Himalayan salt
Whilst the beef is cooking, divide the corn, black beans, cherry tomatoes, lettuce, cheese and avocado between two bowls
Serve with a lime wedge
