INGREDIENTS
16 ounces of pork loin fat removed
2 tablespoons sesame oil divided
1 red onion sliced
1 bag veggie coleslaw mix
1 tablespoon soy sauce
1 clove garlic minced
1 tablespoon ginger minced
1 green onion sliced thinly
Sweet Chili Mayo
1/4 cup low-fat mayonnaise
2 tablespoon sweet chili sauce
Egg Roll Sauce
3 tablespoons soy sauce
1 tablespoon hot sauce
2 teaspoons garlic powder
1 teaspoon garlic minced
METHOD
Mix together sweet chili mayo ingredients in a small bowl and set aside
Combine egg roll sauce ingredients and brush over the pork loin
Heat 1 tablespoon sesame oil in a skillet or wok on medium-high heat
Place pork in the pan and sear for 1-2 minutes
Increase the heat to High, flip the pork over, and cook for 5 minutes
Flip over once more and cook for another 5 minutes
Remove from the pan and let rest
After 2-3 minutes, cut into 1” pieces
Meanwhile, sauté onion in the same skillet over medium heat for 5 minutes or until translucent
Add the veggie slaw and sauté for another 3-4 minutes
Stir in ginger, garlic, soy sauce for 1 minute
Add the pork back to the pan to warm
Remove from heat and top with green onion and sweet chili mayo
