INGREDIENTS

  • 16 ounces of pork loin fat removed

  • 2 tablespoons sesame oil divided

  • 1 red onion sliced

  • 1 bag veggie coleslaw mix

  • 1 tablespoon soy sauce

  • 1 clove garlic minced

  • 1 tablespoon ginger minced

  • 1 green onion sliced thinly

Sweet Chili Mayo

  • 1/4 cup low-fat mayonnaise

  • 2 tablespoon sweet chili sauce

Egg Roll Sauce

  • 3 tablespoons soy sauce

  • 1 tablespoon hot sauce

  • 2 teaspoons garlic powder

  • 1 teaspoon garlic minced



METHOD

  1. Mix together sweet chili mayo ingredients in a small bowl and set aside

  2. Combine egg roll sauce ingredients and brush over the pork loin

  3. Heat 1 tablespoon sesame oil in a skillet or wok on medium-high heat

  4. Place pork in the pan and sear for 1-2 minutes

  5. Increase the heat to High, flip the pork over, and cook for 5 minutes

  6. Flip over once more and cook for another 5 minutes

  7. Remove from the pan and let rest

  8. After 2-3 minutes, cut into 1” pieces

  9. Meanwhile, sauté onion in the same skillet over medium heat for 5 minutes or until translucent

  10. Add the veggie slaw and sauté for another 3-4 minutes

  11. Stir in ginger, garlic, soy sauce for 1 minute

  12. Add the pork back to the pan to warm

  13. Remove from heat and top with green onion and sweet chili mayo
