GRILLED TURKEY BREAST WITH ALMOND GREEN BEANS

INGREDIENTS

  • 300g raw, turkey breast (3 x 100g)

  • 9 cups green beans, ends trimmed

  • 1 tsp. paprika

  • 1 tsp. dried basil

  • 1 garlic clove crushed

  • 2 tbsp. almond flakes

  • 1/3 brown onion, chopped

  • 1 tbsp. olive oil

  • 1 tbsp. coconut oil


METHOD

  1. Heat coconut oil in a non-stick fry pan over medium temperature and cook the turkey breast pieces with paprika, basil, and garlic for a 3-4 minutes on each side or until cooked

  2. Meanwhile, heat olive oil in a non-stick saucepan over medium temperature and saute the onion for a few minutes. Add the beans to the pan and cook for 5 minutes, stirring occasionally. (Tip: Whilst the beans are cooking, add 1-2 tablespoons of water in the pan to create steam and cover with a lid). Once cooked sprinkle the almond flakes on top

  3. Divide the turkey breast and almond green beans into three meals. Dish one serving on a plate and refrigerate the remaining two meals to be consumed over the next couple of days.
