INGREDIENTS
1 x 60g wholemeal pita bread
80 Gram halloumi cheese (grated)
40 Gram red onion (sliced)
20 Gram baby spinach leaves
50 Gram red capsicum (chopped)
80 Gram cherry tomatoes (chopped in half)
10 Gram tomato paste
1 Clove garlic clove (crushed)
Pinch chilli flakes
METHOD
Preheat oven to 180°C and line a baking tray with baking paper
Place the pita bread on the tray
Spread the tomato paste and crushed garlic over the wrap
Layer the spinach, onion, capsicum, cherry tomatoes and halloumi over the pita bread
Bake in the oven for 10 minutes or until the vegetables are cooked on top
Once cooked remove from the oven, sprinkle with chilli flakes and slice into 4 slices
