HEALTHY NO-BAKE ALMOND BUTTER COOKIES (ENERGY BALLS)

Healthy No-Bake Cookies with almond butter! They're great as a post- and pre-workout snack as well.

TOTAL TIME: 10 MINUTES


INGREDIENTS

  • 1/2 cup almond butter

  • 1 Tbsp flax meal

  • 1/3 cup roasted cashews

  • 1 Tbsp honey / maple syrup

METHOD

  1. Grind about 2/3 of the cashews and chop the other 1/3.

  2. In a bowl mix the almond butter with the honey.

  3. Add in 2 Tbsp of ground cashews and the flax meal and mix again.

  4. Combine the rest of the ground cashews with the chopped cashews and spread on a bowl for the coating.

  5. Form small balls from the almond butter "dough" (mine was enough to make 8).

  6. Roll each ball in the coating mixture to cover everywhere.

  7. Place in an airtight container and let sit in the fridge to firm up for about an hour.

  8. Take out of the fridge and top each ball with a roasted almond, pressing it down to form cookies from the balls.

  9. Keep in the fridge for 3-5 days.
