INGREDIENTS
1 tbsp. (20ml) maple syrup
5g (1tsp.) white miso paste
20 ml soy sauce
1/2 tsp. ground ginger
2 tsp. (10ml) boiling water
2 x (150g) salmon fillets, skinless
200g broccolini
10ml olive oil
pinch Himalayan salt
800ml filtered water
70g brown rice, uncooked and rinsed
pinch pepper
METHOD
Preheat oven to 180 degrees Celsius and line a tray with baking paper.
Prepare rice. Boil water in a saucepan and add in brown rice. Reduce to a simmer and cover. Cook for 30 minutes or until rice is cooked. Once cooked, stand covered for 5 minutes. Season with a little salt and pepper.
While rice is cooking, add maple syrup, miso paste, soy sauce and ginger to a medium bowl with boiling water. Mix until well-combined.
Add salmon to the bowl and toss to coat all sides of the fillets. Add to the lined tray and drizzle any remaining sauce over the top. Scatter broccolini around the tray, drizzle with oil and season with salt and pepper. Bake in the oven for 20 minutes, or until cooked to your liking.
Once salmon is cooked, add one fillet to a plate with half of the rice and broccolini. Refrigerate remaining portion for tomorrow's leftovers
