INGREDIENTS
1 pound salmon cut into 4 filets
salt and pepper to taste
2 tablespoons avocado oil divided
1 shallot thinly sliced
1 garlic clove minced
1/4 cup vegetable broth
1 cup milk
2 ounces Neufchatel
juice of half a lemon
1/4 cup fresh dill chopped
2 tablespoons capers
METHOD
Melt 1 tablespoon of butter, then mix with the lime juice, zest, and seasonings.
Cover the chicken breast fillets with the spice mixture and let marinate for about half an hour.
Add the other tablespoon of butter to a cast iron skillet over medium-high heat. Add the chicken and cook for about 8 minutes or until fully cooked through and each side nice and dark.
Remove from heat, let rest for 5-10 minutes, and slice. Serve each fillet with a lime wedge and enjoy!
