INGREDIENTS

  • 150g silken tofu

  • 150g white potato, grated

  • 50g brown onion, grated

  • 30g kale, finely shredded

  • 100g carrot, grated

  • 10ml olive oil

  • 1 garlic clove, crushed

  • 1 tsp. turmeric powder

  • pinch Himalayan salt

  • pinch pepper


METHOD

  1. First, begin by removing the excess moisture from the potato. Using a clean tea towel or paper towel over a bowl, add the potato in the middle and twist to remove as much liquid

  2. Heat olive oil in a non-stick fry pan over medium temperature and saute the onion with garlic for a minute

  3. Mix in the carrot, kale, potato, tofu, turmeric, Himalayan salt and pepper and cook for 7-10 minutes stirring occasionally

  4. Once cooked, transfer the potato hash to a bowl and serve
