150g white potato, grated
50g brown onion, grated
30g kale, finely shredded
100g carrot, grated
10ml olive oil
1 garlic clove, crushed
1 tsp. turmeric powder

METHOD
First, begin by removing the excess moisture from the potato. Using a clean tea towel or paper towel over a bowl, add the potato in the middle and twist to remove as much liquid
Heat olive oil in a non-stick fry pan over medium temperature and saute the onion with garlic for a minute
Mix in the carrot, kale, potato, tofu, turmeric, Himalayan salt and pepper and cook for 7-10 minutes stirring occasionally
Once cooked, transfer the potato hash to a bowl and serve
