Salmon Tacos with Avocado Crema

INGREDIENTS

Salmon

  • 1 pound salmon

  • 1 tablespoon avocado oil

  • 2 tablespoons taco seasoning


Avocado Crema

  • 1 avocado large

  • 3 tablespoons plain Greek yogurt

  • juice of half a lime

  • 1 garlic clove minced

  • ½ cup cilantro chopped (optional)

  • salt and pepper to taste


Other Ingredients


  • 8 corn tortillas taco size

  • 1 cup pico de gallo



METHOD

  1. Preheat oven to 400°F. Spray a baking sheet with cooking spray and place the salmon on the baking sheet. Drizzle it with the avocado oil. Then sprinkle with taco seasoning. Bake for 8-10 minutes or until the salmon reaches an internal temperature of 145°F.

  2. For the avocado crema, blend all the ingredients until smooth and creamy.

  3. Once the salmon is done baking, fill the tortillas with salmon, avocado crema, and pico de gallo. Serve immediately.
