INGREDIENTS
2 x (35g) wholegrain bread slices
150g firm tofu
10g basil, finely diced
2 tsp. (10ml) olive oil
30g baby spinach leaves
Himalayan salt & pepper
METHOD
Toast bread slices to your liking. Set aside.
Place the tofu in a bowl and using a fork, mash into small curds. Stir through diced basil.
Heat oil in a large non-stick frying pan over a medium to high heat. Add tofu and cook until some liquid has released and tofu is slightly golden and cooked well, about 3 minutes.
Add in spinach and stir through until wilted. Season with salt and pepper.
Serve scrambled tofu on toast.
