INGREDIENTS

  • 100g chicken breast

  • 2 cos lettuce leaves

  • 1 slice halloumi cheese

  • 1/2 tomato, sliced

  • 1/3 red onion, sliced

  • 1 Portobello mushroom

  • 2 tbsp. natural hummus

  • 2 tbsp. italian herbs

  • 1 lemon wedge

  • 1 tsp. coconut oil

  • Himalayan salt and pepper

METHOD

  1. Heat a non-stick fry pan with coconut oil and add the chicken breast. Sprinkle the herbs and salt over the chicken and drizzle with lemon. Cook for 4 minutes on each side or until liking

  2. Meanwhile using the same pan cook the halloumi cheese and mushroom for a few minutes on each side or until golden brown. Remove from the pan

  3. Lay the lettuce leaves out. Using one of lettuce leaf add the onion, tomato, mushroom and halloumi. Place the chicken on top. Spread the hummus over the chicken. Place the second lettuce leaf on top

  4. Serve
